REVIEW – Mezcal Burrito Fiestero Artesanal Joven

Produced in the northern state of Durango from Cenizo Durangensis agave (and not Blue Weber agave like tequila), Mezcal Burrito Fiestero Artesanal Joven has a light smokiness pleasantly reminiscent of the gentle wafts of smoke from the embers of a campfire.

On the nose, this mezcal has that light smokiness in the background, a malolactic “cheesy/funky” aroma like from a block of hard aged cheese (think parmigiano or pecorino), a (fresh cut) “grassy”/vegetal note, and tropical fruits (more like the fruit rind with some of the fruit flesh rather than the heart of the fruit, like a pineapple or a sweet melon).

These aromas make their presence on the palate as well with the addition of a spicy cinnamon-like note from the roasted agave. The light smokiness makes itself most present on the back palate after swallowing a sip on the exhaling of breath in a way quite similar to the sensation after eating lightly smoked BBQ or fish. The smokiness is not aggressive, as it is for many drinkers in many of the most widely found commercial mezcal brands.

It was great in a mezcal Margarita.

The biodiversity of Cenizo agave means that differences in environment and soil (terroir, similar to wine and Tequila Ocho) make themselves known in the characteristics of each agave plant. Durango is the northernmost state in mezcal’s denomination of origin (DO). The Cenizo agaves used to produce Burrito Fiestero are wild grown, mature, 12-year-old plants whose brix (sugar) levels are at their height.

After being hand harvested, the agaves are cooked underground in a volcanic rock pit oven for 72 hours before being shredded, fermented with mountain spring water using natural airborne yeast in wooden, open-air tanks.

The fermented liquid is then double distilled in small copper stills together with the agave fibers for extra flavor. The final liquid is crystal clear and bottled at 42% ABV. Burrito Fiestero coats the glass beautifully and has a definite viscosity of mouthfeel.
