Spirits Bottle Photography Series – PART 6: Rey Sol Extra Añejo

Produced at NOM 1103, Casa San Matias (Casa San Matías), Rey Sol Extra Añejo is packaged in a beautiful reusable glass decanter bottle designed by Mexican artist Sergio Bustamante. The tequila is aged for six years in new French Oak barrels. Produced using a roller mill to extract the Weber Blue agave sugars after they’re cooked for 48 hours in stone/brick ovens, Rey Sol is fermented in stainless steel tanks before being double distilled. The final product is cut to 80 proof (40% ABV) using deep well water.

The extra añejo is a vibrant amber/copper color with a flavor profile (aromas and flavors) that includes sweet cooked agave, baking spices, chocolate, vanilla, nuts, hints of caramel and butterscotch, and dried fruit, illustrating the French Oak influence.

Casa San Matias grows and uses its own agaves in the Jalisco highlands and aren’t harvested until they’re between 7-10 years old with peak brix (sugar levels). It produces a number of other tequilas including a nice budget line, Corazón de Agave, a specialty limited edition line, Expresiones del Corazón with different barrel aging, San Matias Tahona series, and the San Matias line, the last of which includes a budget-friendly, nice extra añejo, San Matias Gran Reserva.
