Spirits Bottle Photography Series – PART 9: ArteNOM 1579 Blanco Tequila

The brand ArteNOM was founded by Jake Lustig, an American who grew up in Oaxaca. He partners with some of the most respected tequila master distillers & distilleries to produce unique expressions of blanco, reposado, & añejo (anejo) tequila.

Produced by El Pandillo distillery (NOM 1579) by “Mad Scientist” master distiller Felipe Camarena, ArteNOM 1579 uses Los Altos highlands Weber Blue agaves grown at over 6,700 feet above sea level in the mountain town of Jesús María. The soil that the hills agaves grow in stresses the plants out, causing them to produce more sugars (brix) that results in a sweeter tequila.

After the agaves are harvested, they are cut in half and then into quarters, the center (cogollo) is removed because of its bitterness, and then the cut agaves are steam roasted without pressure in brick ovens (hornos) for thirty hours, including a six hour pre-roast that melts away bitter elements from the agaves and a six hour cool-down period.

After they’re cooked, the agaves have their sugars removed using a Camarena-designed special gear-spindle roller mill he calls “Frankenstein,” drawing on his expertise and education as a civil engineer. The agave sugars (aguamiel) is then double distilled in copper pot stills to around 56% ABV (112 proof) before being cut down to just under 41% ABV (82 proof) using reverse-osmosis demineralized water, half collected rain water and half filtered water from a well at the distillery. Before bottling, the blanco is aerated.

Crystal clear with shards of silver when the light hits it at certain angles, like a quality blanco, ArteNOM 1579 has an aroma profile rich in minerals from the water, cooked agave and baking spices, a slight malolactic smell, pepper, some vegetal/herbal notes, and an earthiness. On the palate, ArteNOM 1579 brings flavors of sweet cooked agave and baking spices, vegetal/herbal notes, pepper, spearmint, citrus, and a hint of floral.
