
Vermont distillery Caledonia Spirits, founded in 2011, has made a name for itself as the producer of a delicious gin made with natural, sustainable local, raw, wildflower honey with each batch differing slightly in flavor profile depending on the specific seasonal honey (and differences in the flowers the bees visited that season) used in distillation. Distilling in small batches, Caledonia Spirits has built its business model on maintaining environmental sustainability, highlighting the connection between local communities, the environment and land, and its spirits. In addition to its gins, the distillery also produces whisky using 100% Vermont grown and malted grains.
Barr Hill Reserve Tom Cat Gin is one of the distillery’s flagship products. The gin itself is distilled, like its regular line sibling, using Vermont honey in addition to the juniper and other natural botanicals and aromatics. What makes the Tom Cat Gin different is that it’s aged in new American Oak barrels, adding the natural flavors of the wood to the gin’s other flavors and aromas.
In addition to the wildflower honey, juniper berries, and floral aspects, the gin’s flavor profile draws in caramel, oak and barrel spices, pine, fruity notes, and pepper from the natural aromatics and botanicals as well as the oak barrels. The gin is a vibrant copper color.
