Corazón (Corazon) de Agave is the budget-friendly tequila line produced by distillery Casa San Matías (NOM 1103) by master distiller Rocío Rodríguez. The line’s regular reposado and añejo are blends but the line’s single barrel program allows stores to select from Sazerac brand whisky barrels to age barrel pick reposados and añejos. Barrel choices include 1792 Small Batch Bourbon, Sazerac Rye, Blanton’s Bourbon, Eagle Rare 10-Year Bourbon, Weller Bourbon, and Buffalo Trace Bourbon.
The single barrel is #720 and was released during Spring 2025 as a limited availability item with per customer/per store purchase limits set at 1 bottle.
Corazón de Agave uses mature 7-10-year-old Blue Weber agave cooked in clay ovens for 48 hours before the aguamiel is extracted using a roller mill. Fermentation lasts 72 hours in stainless steel tanks using proprietary yeast and native natural yeast in the open air. The blanco is 2x-distilled in stainless steel pot steels and is oxygenated/aerated after before barrel aging. This single barrel was aged for 11 months in American White Oak barrels used to age Sazerac Rye.
COLOR: Light gold
AROMA PROFILE: Picks up rye whisky notes including prominent red berries (specifically strawberries) that mix with the cooked agave, light vanilla, light caramel & butterscotch, citrus (sweet lime & freshly-grated orange peel), herbal (mint) notes, finishing with a kick of white pepper & rye spice. The regular blended reposado doesn’t have the red berries & the honeyed caramel/butterscotch & vanilla notes are much more prominent on it.
PALATE: Caramel/butterscotch, sweet cooked agave, baking spices (cinnamon, cloves, nutmeg, cardamom), prominent red berries (strawberry), citrus (orange) peel, white & black pepper, herbs (dried mint), nuts, some oak/barrel tannins, & finishes with a kick of rye spice & a touch of anise. This single barrel has a lighter, fruitier flavor profile to the regular blended reposado.
