I’ve been waiting to get this bottle for quite a long time and this weekend decided to just go for it – this beautiful extra añejo completes my Cierto Private Collection series tequila lineup joining the brand’s blanco, reposado, and añejo. Produced by renowned master distiller Enrique Fonseca, a legend in barrel and cask experimentation, aging, and blending of aged tequilas at his distillery, Tequileña (NOM 1146), in the Jalisco Valley, Cierto is a premium priced tequila brand that really shines with its aged expressions, though its blanco is also very good (though in my opinion, best skipped so you can grab one of the aged expressions instead).
Made with mature Blue Weber agave from Fonseca’s estates in the Jalisco Highlands, Cierto uses low pressure autoclaves for steam cooking the agave, a roller mill to extract the aguamiel, stainless steel tank fermentation, 2x-distillation in copper pot stills, and natural spring water to bring the 80 proof (40% ABV) tequilas to bottling proof. The extra añejo is aged for 4 years in French Oak barrels and casks that formerly held cognac, armagnac, and red and white wines. The regular añejo is aged 18 months in the same types of barrels before being blended like the extra añejo. Before bottling, the regular and extra añejos have some special aged tequilas from Fonseca’s personal cellar blended in.
Fonseca is a barrel/cask aging and blending master and I expect this, like the Cierto reposado and regular añejo, to be nothing short of excellent.
