Aged three years longer than the minimum age statement for bottled in bonds, this bourbon is made from a high corn mash bill – 78% corn, 10% rye, and 12% malted barley. A dark amber/mahogany color with creamy/oily viscosity in the glass and across the palate, the bourbon’s aroma profile is defined by a perfect blend of bright toasted oak, brown sugar, caramel, vanilla, warm baking spices (cinnamon, nutmeg, cardamom), honey-drizzled dried cherries, dried orange zest, black pepper, and roasted nuts. On the palate these flavors all make a prominent appearance mixing with herbal notes, tobacco, and a balanced smokiness/barrel char note on the back palate and in the nostrils on the long 10+ second finish.
Once allocated, Heaven Hill Bottled in Bond is now widely available and runs between $40-50 pre-tax in my market, which is a steal for this quality of a bourbon. It’s a very easy sipper and will stand up well in bourbon cocktails. For me, this gives a bunch of allocated bottles more than a run for their money. Looking at you, Eagle Rare 10 Year.
