Produced by master distiller Enrique Fonseca and blender Sergio Mendoza, who are both renowned for their prowess in barrel aging and blending some of the very best aged tequilas on the market, Don Fulano Reposado is distilled at distillery Tequileña (NOM 1146) in the town of Tequila in the Jalisco Valley. The brand uses Fonseca Atotonilco estate-grown Blue Weber agave cooked for 28-32 hours in an autoclave under low pressure. The sugars (aguamiel) are extracted using a screw press and are then fermented 72-96 hours using proprietary agave yeast in an open stainless steel tank. The brand’s releases are blends of distillates 2x-distilled in copper pot copper pot (80%) and Coffey column stills (20%). The reposado is aged 8-11 months in French Limousin and Nevers Oak barrels formerly used to age Burgundy wine before being bottled, non-chill filtered, at 80 proof (40% ABV).
On the nose there are aromas of cooked agave and baking spices (cinnamon, nutmeg, cloves), dried fruits and berry preserves, Middle Eastern sweet limes and grapefruit, fruity caramel, vanilla, and light oak/barrel notes.
Rolling the reposado slowly across the palate there are powerful flavors of sweet cooked agave and the baking spices from the nose with stronger clove notes and the addition of anise, musky earthiness (characteristic of the brand’s tequilas), and punchy fruit notes (berries, orchard and citrus fruits) followed by roasted sweet potato, caramel, vanilla, oak/barrel notes, dark chocolate, herbal/vegetal notes, orange peel, minerality, salinity, and punchy black pepper.
The tequila has a medium-long viscosity in the glass coating it well and a nice creamy/oily/buttery mouthfeel with a 9-10 second finish.
